The latest bagelry to hit the New Orleans food scene, Flour Moon Bagels, is coming together on the Lafitte Greenway. The shop plans to open in a few weeks.
Owner Breanne Kostyk hails from Connecticut and went to school in Brooklyn, where bagel shops dot every neighborhood. A pastry chef, she spent time in the kitchen at the Ace Hotel before embarking on her bagel business.
“While at Ace Hotel, I started developing a bagel recipe,” Kostyk said. “I was always on a quest for the perfect bagel. Finally, I was really happy with my recipe; I realized that I enjoyed making bagels and offering them to customers.”
Kostyk said the pandemic gave her the push she needed to pursue her bagel-making full-time.
“I had a lot of down time and started rolling bagels when I could,” she said. “I launched my Instagram account and started selling bagels out of my house, mainly to friends.”
In the summer of 2020, Coffee Science included Flour Moon in their Sunday morning market, selling 20- to 30-dozen bagels, all hand-rolled by Kostyk herself. As the company’s following grew, Kostyk decided to open a full bagel shop. The Lafitte Greenway shop will offer bagels by the dozen, pints of cream cheese, sandwiches and tartines.
“It’s going to be a little more elevated than a typical bodega-style bagel shop that you would see in New York City,” Kostyk said. “IIt’s going to be a beautiful environment and the space is going to be something special.”
The shop will have 18 seats inside and 24 seats outside and is conveniently located next to Hey! Coffee Café. Flour Moon will offer drip and cold brew coffee, while Hey! Cafe will expand customers’ beverage options.
In addition, Flour Moon is working on getting a liquor license so it can offer mimosas and bloody Marys, and Kostyk wants to get a frozen drink machine so that she can make specialty breakfast cocktails.
Bagel selections will include sea salt bagel, everything bagel, rosemary sea salt bagel, parmesan black pepper bagel, black garlic bagel, and other specialty bagels that will rotate. Sandwiches made with homemade breakfast sausage, bacon, avocado and other options will also be available.
Kostyk is excited to bring another bagel option to a city that is lacking.
“In Brooklyn, the bagel culture is huge,” she said. “I think we’re underserved compared to other large cities when it comes to dedicated bagel shops.”
Flour Moon Bagels will be open Thursday, Friday, and Monday from 7:30 a.m. to 2 p.m. and Saturday and Sunday from 8 a.m. to 3 p.m.
